I just sent this email to my friend Amy - it's a recipe for a kick ass Sudanese/Moroccan stew that I made last night. Vegetarian, totally healthy. Really tasty. Go.
1 can White Beans
2 cans Black Beans
1 can Garbanzo Beans
1 can Corn
1 bunch celery
4 large carrots
2 c cubed butter nut squash
1 medium zucchini
2 cans crushed tomatoes
1 medium sweet yellow onion
4 - 6 oz chopped dried apricots
5 - 6 cloves garlic
2 tbs crushed/roasted garlic
olive oil
2 tsp paprika
1 tsp cinnamon
1 tsp cumin
1 tsp curry
1 tsp turmeric
1 tsp coriander
About 3 - 4 tbs olive oil in large (5 qt) stew pot... Saute celery,
onion & garlic... add in all canned goods - do not drain. Add in
spices, squash, carrots, apricots & zucchini... cover & simmer for 45 minutes.
Yum.
